FOODIE! Mexican Delight, The Tasty Taco




Hola amigos, if you can take the heat and you love spicy delicious food; the tasty taco is your go to snack. The tasty taco is a spicy delicious Mexican snack that tickles the taste buds with its crunchy deliciousness.

SALSA

Ingredients
·         5 piece fresh tomatoes
·         ½ red onion
·         1 jalapeno chile
·         Juice of one lime
·         ½ cup chopped cilantro
·         Salt and pepper to taste
·         Pinch of dried oregano (crumble in your fingers before adding)
·         Pinch of ground cumin, more to taste

Method
Chop the tomatoes, chiles and onions. Wash your hands thoroughly with soap and hot water after handling jalapenos and avoid touching your eyes for several hours. Set aside some of the seeds from the pepper. If the salsa isn’t hot enough, you can add a few for more heat. Place all of the ingredients in a food processor only a few times, just enough to finely dice the ingredients, not enough to pulverize. If you don’t have a food processor, you can finely dice by hand. Place in a serving bowl. Add salt and pepper to taste. Add some more chopped tomato is salsa is too hot. If not hot enough, add a few of the seeds from the chilies, or add a little more ground cumin. Let it sit for an hour for the flavours to combine.

TACO

Ingredients
·         1 pound ground beef
·         1 (18 ounce) package restaurant style tortilla chips
·         ¾ cup water
·         1(18 ounce) package tortilla chips or regular chips
·         1 cup shredded sharp Cheddar cheese, or more to taste
·         1 (15.5 ounce) can baked beans
·         1 cup salsa, I cup sour cream or more depending on you
·         1 (10 ounce) can pitted black olives drained and chopped
·         4 green onions (Spring onions), diced
·         1(4 ounce) can sliced jalapeno peppers drained
·         1 canned taco seasoning mix

Method
Cook and stir ground beef in a sauce pan over medium heat until meat is flaky and cooked for about 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened for about 8 to 10 minutes. Set the oven rack about 6 inches from the heat source and preheat the oven for about 5 minutes. Lines a baking saucepan with aluminum foil.
Spread tortilla chips on the preheated baking sheet; top with Cheddar cheese, baked beans and ground beef mixture. Broil in the preheated oven until cheese is melted, watching carefully to prevent burning for 3-5 minutes. Top nachos with salsa, sour cream, black olives, green onions and jalapeno peppers.
